Sweet Potato Brownies

I had a bag of sweet potatoes, so I figured I’d use a few for a brownie experiment. I just worked with what I had in my kitchen. Maybe it's because I'm a chocolate hater but this came out way too bitter and nowhere near sweet enough. I ended up saving it with a layer of cream cheese frosting but this is a WORK IN PROGRESS 😣 


QUICK INFO

  • Wash and dry sweet potatoes. Stab with a fork and spray with oil. Bake at 400F for 1 hour.

  • Brownies will bake at 350F for 20-25 minutes. I then lowered it to 325F and baked an extra 5 minutes.


  • Servings cut into 9 squares: 249 Calories, Protein 10.6g, Sugar 5.3g,  Fiber 6.8g
  • Servings cut into 12 squares: 188 Calories, Protein 8g, Sugar 3.7g, Fiber 5.1g


Ingredients

- 1 cup mashed sweet potato
- 1/2 cup of sun butter original
- 2 large eggs
 -1/2 cup great value Greek plain yogurt
- 1/3 cup maple grove sugar-free syrup
- 2/3 cup great value cocoa powder
- 1 teaspoon baking soda



I'm sure the small bits of sweet potatoes could be hidden if an immersion blender was used. I didn't taste potato and the texture was more like a cake.🤔

Sugar alternatives

1/3 cup Honey

100% Pure maple syrup

Maybe vanilla extract?
